Cooking with Kat Buckwheat Granola

Recipe from the Minimalist Baker
Ingredients:
• 1 1/2 cups raw buckwheat groats
• 1 1/2 cups gluten-free rolled oats
• 3/4 cup chopped raw nuts or seeds
• 1 cup unsweetened coconut flakes
• 1/2 tsp ground cinnamon
• 1/4 cup coconut oil
• ¼ cup maple syrup
• 3 Tbsp. nut butter
• 2 tsp vanilla extract
• 1/2 tsp sea salt (optional)

Instructions:
1. Preheat oven to 325 degrees F.
2. Line a rimmed baking sheet with parchment paper.
3. Add buckwheat groats, oats, nuts, and cinnamon to large bowl and stir.
4. In small saucepan or microwave, warm up oil, and maple syrup until combined.
5. Add nut butter, vanilla extract, and salt with wet ingredients.
6. Combine wet ingredients into dry ingredients and mix well.
7. Spread evenly onto baking sheet and bake for about 25 minutes.
8. Stir halfway through.
9. Remove and let cool. Once cool you can add some dried fruit.

Notes: My favorite way to eat this is with almond milk and frozen blueberries
